Caviar
Caviar in perfume is a gourmand-marine accord that suggests the salty, savoury and faintly oceanic character of fish roe. Used as a daring, luxurious touch, it adds a briny, umami-like and sometimes skin-like warmth to a fragrance, most famously in Mugler's Womanity, which paired fig with a caviar accord.
What does Caviar smell like?
As a perfume note, caviar is interpreted rather than copied. It is usually salty and marine, with a savoury, slightly buttery or creamy depth and a hint of mineral or iodine freshness. In well-balanced compositions it reads as warm, sensual and skin-like rather than fishy. Some brands use the word caviar more loosely, to signal opulence, for example in vanilla or rose fragrances where the note is mainly a salty, ambery accent.
How perfumers create Caviar
There is no caviar extract used in perfume; the effect is an accord. Perfumers typically combine marine molecules and a trace of seaweed absolute for sea freshness, ambergris-type materials such as ambroxan for saltiness, musks and creamy lactones for richness, and small amounts of savoury or umami-like materials for realism. The balance matters, because too much can tip from luxurious into unpleasant.

Caviar in perfume history
Caviar has no traditional place in perfumery. Its reputation as a note comes from Mugler Womanity (2010), which surprised the market by pairing sweet fig with a salty caviar accord, extending the brand's taste for unexpected gourmand ideas.
Caviar in modern perfumery
Caviar has since appeared in a handful of niche releases, from Electimuss Black Caviar to newer vanilla and rose compositions that use the word to suggest luxury. It remains a rare, conversation-starting note rather than a mainstream trend.
How Caviar wears and what it pairs with
A caviar accord typically sits in the heart and base, where its saltiness warms into musk. It pairs with fig, vanilla, rose, ambergris, woods, musks and sea notes.
