Praline
Praline is a rich gourmand note that recreates the smell of nuts cooked in caramelised sugar: sweet, toasty, buttery and nutty. It is one of the defining notes of modern gourmand perfumery, built from caramel and nut accords rather than a natural extract, and it gives fragrances an edible, dessert-like warmth.
What does Praline smell like?
Praline smells like hazelnuts or almonds coated in golden caramel, often with a creamy, chocolate-like depth. It is roasted and slightly bitter at the edges, which makes it feel more complex than plain sugar. French praliné paste, the base of many chocolates and pastries, is a good reference.
How perfumers create Praline
Praline accords combine a caramel base of ethyl maltol and maltol with nutty notes such as roasted pyrazines and hazelnut-scented filbertone, with vanillin and lactones for creaminess. Some perfumers add cacao, tonka or almond-scented benzaldehyde to shape the result.

Praline in perfume history
The confection itself is often credited to 17th-century France. As a perfume note, praline arrived with the gourmand revolution: Thierry Mugler's Angel (1992) combined it with caramel, chocolate and patchouli, and Lolita Lempicka (1997) followed with a praline-and-liquorice gourmand.
Praline in modern perfumery
Praline became a blockbuster note with Lancôme's La Vie est Belle (2012), which paired it with iris and patchouli and influenced many imitators. It remains popular in mainstream feminine fragrance, while niche brands use it more sparingly with spices, woods or booze.
